I modded my Dark Souls Prepare To Die Edition so that the character has the absolute lowest health and stamina possible. With 1 Health Point everything kills you and armor is absolutely meaningless other than status effects. 1 Stamina point doesnt allow the character to roll, run or backstep either. The rules are to beat the game with no summons and not go crazy in the process. Let me know if you would try this run in the comments and what game you want to me to do this on next!
