Hello, I'm Cassandre, and for today's episode, I'm going to share a dessert with a southern Italian flavor: Sicilian Orange Cake (Pan D'Arancio).

Italy's Sicily is rich in oranges and other citrus, and because of the amazing annual production, oranges are widely used in cuisine, such as cooked food, salads, drinks and desserts, and even a talented fashion design student has made fabric from orange fibers.

The recipe we are going to share this time is a Sicilian-style orange cake, which is a special pastry made by grating a whole orange with its peel and flesh into the batter. The freshly baked cake has an amazing citrus aroma and taste, which is very different from the cakes made by adding fruit juice or using the zest to add flavor, as it tastes slightly sweet with a slight bitterness, but this bitterness brings out the citrus's sweet and sour flavor.

Inheriting the homemade simplicity of Italian pastries, this cake is also very simple to make. It will take a little time to prepare the ingredients, but it can be finished in a single bowl. You can also substitute other citrus fruits besides orange, so we think it's definitely a list-worthy snack for the home.

🇮🇹 How to make Sicilian Orange Spice Cake?
Here's how to make Sicilian Orange Cake and the recipe:

☞ Baking mold size: 15cm (6 inches) diameter, 6 cm high round bottomed baking mold.
☞ Bake at 180°C for 45 to 50 minutes.

✎ Ingredients
Two small and medium-sized eggs, about 100g, at room temperature.
Sugar 90g
Molten unsalted butter 45g, (can also be replaced with vegetable oil)
1 medium orange, washed, pulp and zest about 132g
all-purpose flour 90g
Almond flour 45g
Baking powder 5g
* Prepare 40g orange marmalade (or citrus marmalade), add 5g water, heat and melt, then spread on top of the cake. Alternatively, you can sprinkle the cake with powdered sugar.

✎ Directions
1. Line the bottom and sides of the baking mold with baking paper, or if you don't want to line it with paper, spread a layer of softened butter and sprinkle with flour to prevent staining.
2. Sift the flour and baking powder, and mix well with a fork or egg whisk; sift again to loosen the dry ingredients.
3. remove the tip and the bottom of the orange, cut it into eight boats, remove the seeds if there are any, take the flesh part and cut it into small pieces, if the white skin is too thick, you can remove part of it, then cut the skin into thin julienne pieces, and weigh it out to 132g.
4. Use a food processor to puree the pulp and skin of the willow into a coarse paste, not too fine to retain some texture.
5. Add the eggs and sugar to the cooking bowl and beat on medium speed for 5 minutes, then reduce to low speed and beat for 1 minute until the mixture is thick and white.
6. Add room temperature melted butter in small portions and beat on medium-low speed for one minute.
7. Add orange puree and mix on low speed.
8. Add almond flour (if there are any lumps, please sift it first) and mix on low speed.
9. Add sifted flour and baking powder (in two batches), mix at low speed until no dry powder can be seen, then use a spatula to mix gently by cutting.
10. Dip a little bit of the batter into the baking paper to fix the baking sheet, and pour the finished batter into the baking mold, slightly shaking it from side to side to help the batter flatten out.
11 Preheat the oven at 180°C and bake for 45-50 minutes, until the top is golden brown and a toothpick inserted comes out clean.
12. Let cool in the baking mold for 15 minutes before removing from the oven. After removing from the mold, let cool completely. Traditionally, the top is sprinkled with powdered sugar, but it is also recommended to spread a layer of sweet and sour citrus jam on the top to enhance the flavor.
