📝 Easy Green Cabbage Kimchi Salad
Ingredients
2 tbsp yondu, tsuyu, shiro dashi, fish sauce or soy sauce
1 1/2 tbsp lemon juice (approximately 1/2 juicy large lemon) or rice vinegar
1 1/2 tbsp sugar
1 tbsp chili powder, chili flakes or gochugaru
salt to your taste
1 lb green cabbage, cut into bite-sized pieces
2 green onions, cut into 1” long pieces
5 to 6 garlic cloves, chopped
1 tbsp toasted sesame seeds

📝 Korean Zucchini Noodles
Ingredients
3 eggs
2 medium or 1 large zucchini, julienned
2 tbsp sesame oil, divided
2 1/2 tbsp yondu, tsuyu, shiro dashi, fish sauce or soy sauce, divided
5 to 6 oz dried noodles such as somen, soba, rice noodles, capellini or angel hair pasta
Salt
Cooking oil
Sesame seeds
Chili flakes or gochugaru, optional

📝Spiral Asian Cucumber Salad
Ingredients
2 medium Persian cucumbers, approximately 12 oz
1 tsp salt
1 tsp rice vinegar, black vinegar or lemon juice
2 to 3 tbsp Quick Chili Oil or your choice of chili oil

For the Quick Chili Oil
1/3 cup oil
4 green onions, chopped
3 garlic cloves, chopped
1/2 tsp salt
3/4 tsp sugar
1 tbsp shiro dashi, yondu, tsuyu, soy sauce, fish sauce or chicken bouillon
A pinch of black pepper

📝 Chili Oil Egg Rice
Ingredients
For the Quick Chili Oil
1/4 cup sesame oil
1/4 cup neutral oil such as avocado, grapeseed or sunflower oil
4 green onions, chopped
3 garlic cloves, chopped
1 1/2 tbsp red chili flakes
1/2 tsp salt
3/4 tsp sugar
1 tbsp shiro dashi, Yondu, Tsuyu, Miso broth concentrate, soy sauce, fish sauce or chicken bouillon
A pinch of black pepper

For the Egg Rice
2 eggs
A bowl of warm cooked rice

📝 Sausage Kimbap (Sausage Gimbap)
Ingredients
For the Carrot
2 tbsp lemon juice or rice vinegar
1 tbsp sugar
A pinch of salt
2 medium carrots, julienned

For the Cucumber
2 small or 1 large cucumber, julienned
1/4 tsp salt

For the Other Fillings
3 eggs
3 long sausages
3 long sticks of imitation crab meat (If your imitation crab meat is too thick, cut them in half)
Cooking oil

For the Rice
2 cups warm cooked medium to short grain rice
1/2 tsp salt
1/2 tsp sugar
pinch of black pepper
1 tbsp sesame oil, plus more to coat the kimbap
1 tsp esame seeds, plus more to garnish the kimbap
3 roasted gim (nori)
