When I don't have a lot of time on my hands, I turn to my trusted pressure cooker. It saves my day every time! I prepare many family-cooked meals in that pot, and everything tastes better! It's also great to use one dish for a whole meal and not have to continually clean, dry and put away. You could start your pressure cooker in the morning and let it go all day until the evening. It's great if you have to get to the office or will be out all day.

Cooking lamb shanks in a Mediterranean fashion is a bit of a hit in my household. I use whatever veggies we have in the fridge, our trusted spices, and good old pasta. This can be made with potatoes, but my daughter requested some pasta today. You could freeze the leftover sauce to make another pasta dish on a night you can't be bothered cooking. Eating this (if there is any leftover) tends to be even better the next day, but this time, it's all gone. My family polished it off while I left the softer marrow bones for my dog.
