This is one of my favourite Greek treats made completely vegan without the butter, eggs and sugar in your regular variety.

About seven years ago, I had my own vegan and paleo bakery. I would make my treats from scratch and sell them at markets and festivals.

I have a library full of deliciousness waiting to be revealed on my channel.

My favourite desserts derive from my Greek heritage.

With my baklava creation, I use the deliciousness of nuts.

I've created a simple and delicious cashew pastry. You can use this pastry in anything and it keeps well stored in an, airtight container.

All up this recipe took me less than 30 minutes, and they are a delicious treat I can have without experiencing any gut disturbances.

Ingredients

Pastry
-2 cups of cashews soaked overnight
-1 tbs maple syrup
-1 tbs vanilla essence

Filling
-1.5 cups chopped walnuts
-1.5 cups chopped pistachios
-1 tbs cinnamon
-1 tbs gingerbread spices
-pinch of salt
-1 tbs brown rice syrup
-1 tbs maple syrup

Storage
-keep in a container and refrigerate after 3 days.
Can keep it for 1-2 weeks in the fridge.
-it makes 9, but I broke one, lol!
