Growing up Fruity Pebbles didn't last in my house longer than an hour. So I took my favorite cereal and combined it with a delicious cake!

Ingredients:

-1 cup all-purpose flour
-1/2 cup granulated sugar
-1 tsp baking powder
-2 whole eggs
-1/2 cup whole milk
-Food coloring gel (red, blue, green, orange, yellow, purple)
-1 cup Fruity Pebbles (plus more for decoration)
-Store-bought frosting (or homemade, if preferred)

Instructions:

-Prepare the Batter: In a mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup granulated sugar, 1 tsp baking powder, 2 whole eggs, and 1/2 cup whole milk. Whisk together until well incorporated.

-Color the Batter: Using food coloring gel, color the batter with your chosen hue. For a rainbow effect, you'll need to repeat the batter making process for each color (red, blue, green, orange, yellow, purple).

-Add Fruity Pebbles: Into the colored batter, gently fold in about 1 cup of Fruity Pebbles.

-Bake: Pour the batter into a seven-inch baking pan and bake in a preheated oven at 350Β°F (175Β°C) for about 30-40 minutes. Repeat this step for all colors.

-Cool and Prepare the Cake: Once baked, allow cakes to fully cool. Use a butter knife to help release the cake from the pan by running it along the edges. Remove parchment paper from the bottom. Even out the tops of each cake layer using a wire cake cutter or bread knife.

-Frost the Layers: Whip the store-bought frosting with a hand mixer to incorporate air and make it smoother. Starting with the purple layer, apply a generous amount of frosting on top. Stack the next colored cake on top and press down gently. Continue this process for all layers. For the last layer, flip it over to ensure the top of the cake is even.

-Crumb Coat: Apply a thin layer of frosting around the cake to seal in the crumbs. Use a spatula or palette knife to ensure an even coat. Chill the cake in the refrigerator for 30 minutes to an hour.

-Final Frosting: After chilling, apply another layer of frosting on the cake, smoothing out the edges and top.

-Decorate: You can either decorate the cake by pressing Fruity Pebbles around its sides or use a piping bag with two different colors to create a unique design on the cake. Optionally, you can use both methods.

-Serve and Enjoy: Slice the cake to reveal the rainbow layers and enjoy your Fruity Pebbles Rainbow Cake!
