ALOO PALAK (SPINACH AND POTATO CURRY)

Ingredients
1 bunch of Fresh Spinach, Wash and Finely Chopped
1 bunch of Fresh Fenugreek, Wash and Finely Chopped
2 Potato, peeled and cubes
3 Tomatoes Finely Chopped
1-2 Green Chilli, Slit
1 tbsp Gingergarlic Paste
1 tbsp Crushed Coriander
1 tsp Cumin Seed
¼ tsp Turmeric Powder
1 tsp Chicken Powder
1 tbsp Achar Masala
1 tsp Chilli Flakes
3 tbsp Oil
Salt to taste

Instructions
Heat oil in a pan and add ginger garlic paste, tomatoes and all dry spices. Cook it until the tomatoes become soft and the oil starts to leave the sides. Now add spinach, Fenugreek and potatoes stir fry and let it cook for 10-15 minutes or until the potatoes tender. Now add the slit chilli and mix well and cook it for 2 minutes more.
Serve hot with roti, naan, rice, or bread. You can also serve yogurt and chopped red onions on the side, if desired.
