Ingredients:

¼ cup cooking oil
1 tsp salt, plus ½ tsp for seasoning
1 whole chicken, cut into small curry pieces
1½ tbsp garlic paste
1½ tbsp ginger paste
1 tsp chili powder
½ tsp turmeric powder
1 tbsp coriander powder
4-5 medium tomatoes, halved
2 tbsp plain yogurt
1 tsp black pepper
7-8 green chilies, slit
½ tsp garam masala
Fresh ginger, julienned, for garnish
Fresh coriander leaves, for garnish
Instructions:

Preheat the Pan:
Heat the oil in a large pan over high heat. Add 1 tsp of salt.
Cook the Chicken:
Place the chicken pieces in the pan and sauté without moving them much until they change color.
Add Pastes and Spices:
Stir in the garlic and ginger pastes. Cook for 5-6 minutes until fragrant.
Add chili powder, turmeric, and coriander powder. Cook until the spices release moisture.
Tomato Layering:
Place the tomato halves on top of the chicken. Cover and cook over medium-low heat for 15 minutes.
Mash and Mix:
Remove the tomato skins, then mash the tomatoes in the pan with a spatula.
Add Yogurt:
Stir in the yogurt, cover, and cook for another 15 minutes until the curry starts releasing oil from the sides.
Seasoning:
Add black pepper, green chilies, and garam masala. Mix well and cover. Cook for an additional 5 minutes on low heat.
Garnish and Serve:
Garnish with julienned ginger and fresh coriander leaves. Serve hot with rice or paratha.
