Hello friends! No obesity today, just a healthy eggplant recipe! Delicious baked vegetable snack with which you will forget about blood sugar! This eggplant dish is so light and easy to prepare that I am ready to make it every day! My family loves these baked eggplants! A very quick appetizer recipe that will always be desired at a family lunch or dinner with friends. An excellent vegetarian recipe that can be eaten day and night and no obesity! INGREDIENTS AND RECIPE:

3 eggplants.
1 teaspoon of salt.
3 tablespoons of olive oil.
5 gr dried ginger.
Oregano.
1 clove of garlic.
Salt.
Black pepper.
150 ml tomato puree.
1 tablespoon of olive oil.
Paprika.
Basil.
2 cloves of garlic.
100 gr cheese.
Breadcrumbs.

1. Cut 3 eggplants into rings and place in a bowl.
2. Add 1 teaspoon of salt, mix well and set aside for 10 minutes.
3. Add 3 tablespoons of olive oil and 5 grams of dried ginger.
4. Add oregano, finely grate 1 clove of garlic, salt and pepper and mix well.
5. Pat the eggplant dry with a paper towel.
6. Grease a baking sheet with olive oil and spread eggplant evenly.
7. Brush eggplants with olive mixture and bake at 200°C / 390°F for 20 minutes.
8. Add 1 tablespoon of olive oil to 150 ml of tomato puree.
9. Add paprika, basil and finely grate 2 cloves of garlic.
10. Salt, pepper and mix well.
11. Brush eggplants with tomato puree, sprinkle with cumin and roll up.
12. Grease a baking sheet with olive oil and sprinkle with breadcrumbs.
13. Put the eggplant and sprinkle with breadcrumbs on top.
14. Bake at 200°C / 390°F for 20 minutes.
