Ingredients:

Goat/mutton: 1 kg
Water: ¾ cup
Turmeric: 1 tsp
Red chili powder: 2 tsp
Salt: 1¼ tsp (to taste)
Cooking oil: ¼ cup + 2 tbsp
Garlic paste: 1 tbsp
Ginger paste: 1 tsp
Cinnamon sticks: 2 (medium)
Cloves: 5-6
Cardamom: 4
Black pepper: 10-12
Bay leaf: 1
Coconut milk: 1 cup
Cumin powder: 1 tsp
Garlic cloves: 5-6 (or more)
Fried onions (Beresta): ½ cup
Tamarind pulp: 1½ tbsp
Garam masala: ¾ tsp
Roasted cumin powder: ½ tsp
Sugar: ½ tsp (to taste)


Instructions:

In a pan, add water, turmeric, and red chili powder. Mix well.
Add goat/mutton to the pan and mix with the spices.
Add salt and sauté for 4 minutes over high heat.
Once the water reduces, add cooking oil, garlic paste, and ginger paste. Mix well.
Add cinnamon sticks, cloves, cardamom, black pepper, and bay leaf. Sauté for 5 minutes over medium-high heat.
Add coconut milk and cumin powder. Mix well, cover, and cook for 50 minutes over low heat, stirring occasionally.
Add garlic cloves, fried onions, tamarind pulp, garam masala, roasted cumin powder, and sugar. Mix well.
Cover and cook until tender over the lowest heat for 20 minutes or more.
Serve with paratha or freshly cooked white rice.
Tips:

Use goat shoulder for this recipe as it is less expensive than goat leg and perfect for this cooking process.
